I typically make Baghali Polo ba morgh (Lima Bean Rice with Chicken), also referred to as Shevid Baghali (Dill and Lima Bean Rice). Of course instead of chicken you can always serve the dish with stew meat. This time I decided to try Khoresht-e Baghala ba Goosht. Its a bit different…but in very good way.

Khoresht e Baghala

Ingredients (6-8 people):
500 grams of stew meat (approximately 1 lb)
250 grams frozen or dry Lima Beans
3 tablespoons dry Shevid (Dill) or 500 grams fresh Dill
4 - 5 tablespoons chopped onion
water
1/2 cup to 1 cup oil
2-3 eggs (optional)
salt/pepper
turmeric

Directions:
Cut the meat up into pieces (if not already done) then wash the meat. In a pot pour a bit oil and fry the onions until golden. Once the onions are ready add the meat and stir. Add turmeric, salt, and pepper to the meat and stir. Add 3 - 4 cups of cold water after a few minutes of cooking the meat and allow the meat to cook for 20- 30 minutes (place the lid on the pot). Make sure the stove top heat is on medium or medium-low.

If using fresh dill, wash the dill and then chop it up finely. Fry the Dill in a bit of oil for a few minutes. Note: you may choose to not fry the dill, especially if using dry dill. Either way try to use a very small amount of oil to fry the dill. Add the Dill and Lima Beans to the stew after the meat has had a chance to cook. Allow the Khoresht-e Baghala to completely cook and for the Lima Beans to fully cook, but not become mashed up. Cook the Khoresht for a 2 - 3 hours for it to fully cook and give out oil.

If you want to add the eggs to the stew once it is prepared in a bowl mix add the eggs and some salt. Do not whip the eggs together, but rather stir the contents just once. Pour the egg mixture in batches into the Khoresht (while it is still on the stove cooking), then stir the stew. After an additional 5 - 10 minutes you can serve the Khoresht with rice that you have prepared.

Its been a long time since I have had this Khoresht, and I felt it was time to make it and share the recipe! If you love eggplants and you love khoresht…then you should definitely try Khoresht-e Bademjan!
Khoresht-e Bademjan on top of plain rice and voila you will have a perfect meal :D

Ingredients (approximately 6 people):
1 lb (approximately 500 grams) stew meat — lamb or beef
6 small and narrow eggplants or 2 medium/large eggplants
3 - 4 tablespoons chopped onions
1 tablespoon tomato paste
2-3 tablespoons lemon juice
oil
salt and pepper
turmeric

Directions:
Cut the meat up into pieces (if its not already) and wash the meat. In a large pot heat up a small amount of oil to saute the onions in. Once the onions begin turning a golden color add the meat to it and stir around for a bit. Add salt, pepper, and turmeric to the meat and stir. Add 3 - 4 cups of water to the pot, tomato paste, and lemon juice then allow the contents to cook (place the lid on the pot and set burner to medium heat).

While the stew is cooking you can prepare the eggplants. If you are using narrow and small eggplants peel the skin and then put a slice through the eggplant (lengthwise), rinse the eggplants, and add salt to each. If you are using larger eggplants peel the skin and chop the eggplant (lengthwise) into a few pieces, rinse, add salt to each piece. Heat up some oil in a frying pan and fry the eggplants until a golden brown color. Note: eggplants do absorb a lot of oil, so if you prefer to bake them that may be a good option and a bit healthier.

When the Khoresht has thickened and most of the water is gone (should only have about 1 cup of water remaining) you will place the eggplants on top of the khoresht. Allow the Khoresht-e Bademjan to cook an additional 15 - 20 minutes for the eggplants to cook with the stew a bit.

Serve with plain rice and any other side dishes (salad, mast, etc.)…and as always enjoy :)

This Khoresht is very similar to Khoresht-e Loobia Sabz (Green Bean Stew), except its made with Green Peas instead. Its simple to make and is served with rice.

Khoresht e Nokhod Sabz

Ingredients (4-6 people):
1 cup Green Peas (fresh or frozen)
2 chicken breasts — cut into pieces
2 Tablespoons Tomato Paste
oil
turmeric
salt/pepper
1 medium onion –finely chopped
2 teaspoons lemon juice (optional)
1 1/2 cups water

Directions:
In a pot heat up some oil and add the chopped onions. Once the onions are tender and beginning to turn golden add the chicken pieces and stir. Add turmeric, salt, and pepper to the chicken and stir. Add the green peas and stir them around a bit with the chicken then add the tomato paste, lemon juice and water. Note: if the water is not enough you may need to add a bit more.

Cover the pot and allow the Khoresht-e Nokhod Sabz to cook over medium heat for at least 45 minutes. Once the Khoresht is thickened and gives out oil it is ready.
