Sabzi Polo ba Mahi is a rice with greens that is typically served with mahi (fish). Obviously everyone uses different types of fish, and depending on where you live you probably don’t have all the types of fish you would like to have.

I made Sabzi Polo ba mahi and have explained the ingredients I used below. For the fish I used Tilapia, which doesn’t take long to cook at all. You can use another type of fish. Halibut is pretty good and if you have access to buying Mahi Sefid (white fish) its pretty tasty too.

Ingredients:
3 cups rice — rinse your rice and soak it for an hour or more before cooking it. Add salt to the water you are soaking the rice in.
Sabzi (greens) — I used a combination of parsley, cilantro, green onions, and dill.
Tilapia –allow it to thaw out if it is frozen before cooking
lemon juice
salt/pepper
garlic powder
flour
eggs (optional)

Directions:
Chop up the parsley, cilantro, green onions (only the ends where it is green, this is in place of tareh), and dill (if using fresh dill). I use a food processor to chop it up.

For the rice, you will bring a pot of water to boil and then add your chopped up greens first and after about 5 minutes add the rice (after draining the water it is soaking in out). Once the rice boils (about 5 minutes) you want to use a strainer to drain the water. Add a half cup water and some oil to the pot and return it to the stove top on a medium-high temperature. Add the rice (now with sabzi) back to the pot and cover the lid with a towel and place it over it. You want to allow it to steam and then turn the heat down to a low temperature. You can allow it to stay on the stove top over 30 minutes. Again the longer it stays the crispier your tahdigh (crispy rice bottom crust) will get. Note: if you are using dry dill don’t add it until you are adding the rice back into the pot with the rest of the sabzi.

For the fish that is served with the Sabzi Polo, first heat some oil in a frying pan. Pour some flour in a bowl or plate and add salt, pepper, and garlic to it then mix together. If you like you can put an egg or two in a different bowl and mix it as well, then you would dip your fish into the eggs then into the flour. For Tilapia I didn’t use eggs, instead I dipped the fish into the flour and coated it on both sides then placed it in the frying pan. Like I mentioned above it doesn’t take long for Tilapia to cook, so make sure you keep an eye on it. Place the lid on the frying pan if you like to allow it to thoroughly cook. Flip it over after a couple a minutes for the other side to fry a bit too. After the fish is done frying you can add some lemon juice to it.

Serve the Sabzi Polo with the mahi.

This Persian Recipe Baghali Polo (Lima Bean Rice) is also referred to as Shevid (Dill) Baghali. You can either eat it with morgh (chicken), or goosht (stew meat).

Ingredients:
1 medium onion- chopped up
chicken breast cut up into pieces
1 tablespoon tomato paste
3 cups rice –rinsed and soaked –add some salt to the soaking rice
1 cup baby Lima beans (or 1 1/2 cups regular Lima Beans) — I use frozen baby Lima Beans
2 Tablespoons Dry Shevid (Dill), or you can use fresh dill
salt/pepper
turmeric

Directions for Baghali Polo Ba Morgh:

You will make your chicken by frying the chopped onions until a golden color in a frying pan, then adding the chicken and stirring. Add salt, pepper, and turmeric. Finally, mix your tomato paste with 1 cup warm/hot water and add to the chicken. Place a lid over the pan and allow it to cook on medium-low heat for approximately 30-45 minutes.

In a pot bring water to a boil and add the frozen Lima Beans. After approximately 5 minutes add the rice and allow it to soften a bit. If you are using fresh dill you will want to add it to the pot as well. If you are using dry dill do not add it until you are about to let it steam. Drain the water and then add 1/2 a cup water and some oil to the bottom of the pan. Pour in half the rice and then add your dry Shevid (dill) and then cover it with the rest of the rice. At this point you may want to add a little more oil or butter over the top of the rice. Then cover the lid with a towel and place it over the top. Once the steam starts to escape from the sides of the pot turn the heat down to a low temperature (the heat should be close to high when you first begin). Leave it on a low temperature for at least 40 minutes…the longer it stays the more tahdigh your Baghali Polo will have. Serve the Baghali Polo with the Morgh (chicken) :)

Another one of my favorite Persian recipes! Tah-chin-e Morgh (Tah-chin with chicken). You can make this Tah-chin by cooking it on stove top or in the oven, but here I share the oven version. Also, at times I like to add some zereshk (barberries) to the Tah-chin, but this time I made it simple :D

Ingredients:
1 medium onion - chopped up
3 cups rice — rinse and then soak in water for at least 1-2 hours…add salt to the water
skinless/boneless chicken breast cut up
oil
turmeric
1 cup water
salt/pepper
1 cup yogurt
4 eggs
1 tablespoon liquid saffron

Directions:
In a frying pan (that has a lid), saute the onion in oil until tender. Then add the chicken pieces and stir around. Add salt, pepper, and turmeric. Add the 1 cup water and place the lid on the pan, leave the stove on a medium-low heat. Allow the chicken to cook for 30-40 minutes. After the chicken is cooked, place the chicken pieces in a dish to cool. Then use a strainer to separate the onions from the chicken stock. Keep the chicken stock for later.

In a bowl of some sort mix together your yogurt, 3 eggs, salt, pepper, and some of the saffron. Once you do this, take a few tablespoons of the mix and put it in another small bowl, add the left over egg, a tablespoon of oil, a tablespoon of the chicken stock, and a little more saffron to it and stir. Place the second bowl in the fridge. Once your chicken is cool, place all the chicken pieces in the first bowl and coat it. Place the bowl in the refrigerator as well and allow the chicken to be marinaded for awhile. I only do this for an hour or so, but some people even make the chicken the night before and allow it to sit in the mix overnight.

When you are ready to make the rice you will place a pot on the stove and fill it half way with water. Once the water is brought to a boil add the rice (after pouring out the water covering the rice). When the rice is boiled and ready, drain the water (use a strainer).

Set the oven to a temperature of 350 °F. In an oven safe round dish (needs to be deep as well) pour some oil and coat the sides. Take 2 spatulas full (2 kafgir) of the rice and mix it with the small bowl of yogurt mix you previously had in the fridge. Now pour that rice into the oven dish and flatten it with the spatula. take out all your chicken pieces from the yogurt mix (previously placed in fridge) and place them on top of the rice/yogurt layer. Pour the remaining rice (white rice in strainer) over everything else in the oven dish and flatten with the spatula. Take the chicken broth left and add the remaining saffron to it (if you wish) and pour it over everything. Cover with foil and place in the oven for approximately 1 1/2 to 2 hours. Tah-chin is almost ready. This last note is very important for making a good looking Tah-chin.

Note: When you want to flip it over place the serving dish on top and then slowly flip over. Wait a few minutes for the dish to cool before doing this. Also, if you find that the crust is stuck you may have to use a knife around the sides to make sure it comes loose.

Appetizer Idea:
You can use a regular or jumbo cupcake pan to create smaller personal sized Tah-chin servings. To bake set oven temperature to 350 °F and let bake for 40 - 50 minutes. If you want the crust to be darker let it bake for 50 - 60 minutes.
